Ice cream is the most popular dessert in the world and that’s a fact. There’s just nothing better than a scoop (or two or three) of your favorite ice cream after lunch, but have you ever wondered if it’s really good for your health? According to recent studies, ice cream is not as harmful as many people think – it can actually increase your cholesterol levels, your blood pressure and may even be responsible for diabetes!
However, there’s no reason to worry – we’re going to show you how to prepare a healthy and delicious version of ice cream using turmeric and coconut milk. Besides the main two ingredients, this tasty ice cream also contains pecans, cashews, cardamom, maple syrup, ginger and cinnamon. Sounds tasty, right? It gets even better – the ice cream is easy enough to prepare. You won’t need an ice cream machine as the pecans and cashews will give it a nice and solid texture. Here’s what you need to do:
- ¼ cup of maple syrup
- ¼ tablespoon of cardamom
- ½ a tablespoon of ground ginger
- 1 tablespoon of cinnamon
- 2 tablespoons of turmeric powder
- A cup of soaked cashews
- ½ a cup of coconut yogurt
- 3 pecans
Soak the cashews overnight in water to make them soggy first, then take them out in the morning. Now, line some parchment paper in a meatloaf pan and make sure it’s over the sides. Put the pan in the freezer for 30 minutes or more.
In the meantime, mix the cashews in a blender, then add the other ingredients and mix until you get a homogenous mixture. Now, take out the pan (after at least half an hour) and pour the mixture on it. Even it out and put the pan back in the freezer on a flat surface. Leave it overnight (at least 12 hours) and you can enjoy your healthy ice cream in the morning!
