Do you have one of those all-time favorite recipes which you can make every day and still not have enough? Well, mine is this, sweet mini peppers stuffed with eggs and feta cheese. If you’ve never tried it I guarantee it will become your next favorite dish. Whenever I prepare them everyone falls in love, even children love them which is surprising, kids loving veggies, not so common right?
You can use sweet bell peppers or chili peppers if you prefer spicy food, I’m not a fan so I stick with bell peppers. Just remember not to add any salt because the feta cheese is just enough. And you’ll need an egg for each pepper you stuff.
Here’s the recipe:
You’ll need the following:
- 2lb mini bell peppers (sweet)
- 7 eggs
- 9oz Feta cheese
- A sprinkle of black pepper
- A bit of oil
Grab a bowl and beat the eggs. Add the pepper and stir to combine. Add the feta cheese, crumbling it as you add it to the eggs mixture. Now you can start heating up the pan oiled with a tablespoon or two of oil. Now cook the eggs-cheese mixture just like you’d cook your scrambled eggs, about 10 minutes on medium heat. Set it aside when it’s done and let it cool off. Now the peppers, rinse them and remove the seeds and veins from the middle. Take a small spoon and stuff the peppers with the eggs-feta mixture. Heat up another pan with a quarter cup oil and fry the peppers until they’re golden. Take them out of the pan and on a paper towel to remove the excess oil. Serve and enjoy!
